  • 1 cup Arborio rice
  • 1 cup sliced mushrooms
  • 4 cloves of garlic, minced
  • 4 cups of vegetable or chicken broth
  • 1/2 cup of grated parmesan cheese
  • 2 tablespoons of butter
  • 1 tablespoon of olive oil
  • Salt and pepper to taste

  1. In a large pan, heat the olive oil and butter over medium heat.
  2. Add the minced garlic and sauté for 1-2 minutes until fragrant.
  3. Add the sliced mushrooms and cook until they release their moisture and are browned, stirring occasionally.
  4. Add the Arborio rice to the pan and stir until it is coated in the butter and oil.
  5. Begin adding the broth to the pan, one cup at a time, stirring frequently. Wait for each cup of broth to be absorbed before adding the next.
  6. Continue to add broth until the rice is cooked to your desired consistency. This usually takes about 20-25 minutes.
  7. Once the rice is cooked, remove the pan from the heat and stir in the grated parmesan cheese.
  8. Season with salt and pepper to taste.
  9. Serve hot and enjoy!
