Ingredients:

  • 1 unbaked pie crust
  • 2 cups sliced mushrooms
  • 1 cup chopped asparagus
  • 1 cup shredded Swiss cheese
  • 4 eggs
  • 1 cup milk or half-and-half
  • 1 tablespoon chopped fresh herbs (such as thyme and rosemary)
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 375°F.
  2. Roll out the pie crust and place it in a 9-inch pie dish.
  3. In a skillet, sauté the mushrooms and asparagus over medium heat until they are tender and lightly browned.
  4. Spread the sautéed mushrooms and asparagus over the bottom of the pie crust.
  5. Top with the shredded Swiss cheese.
  6. In a bowl, whisk together the eggs, milk or half-and-half, chopped herbs, salt, and pepper.
  7. Pour the egg mixture over the mushroom and cheese filling.
  8. Bake for 35-40 minutes, or until the quiche is set and lightly browned on top.
  9. Let cool for a few minutes before slicing and serving.
