Mushroom and Spinach Quiche

Ingredients:

  • 1 pie crust (homemade or store-bought)
  • 1 cup sliced mushrooms
  • 1 cup fresh spinach, chopped
  • 4 cloves of garlic, minced
  • 4 large eggs
  • 1 cup of heavy cream
  • 1/2 cup of grated Gruyere cheese
  • 2 tablespoons of butter
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 375°F.
  2. In a large pan, melt the butter over medium heat.
  3. Add the minced garlic and sauté for 1-2 minutes until fragrant.
  4. Add the sliced mushrooms and cook until they release their moisture and are browned, stirring occasionally.
  5. Add the chopped spinach to the pan and cook until wilted.
  6. In a separate bowl, whisk together the eggs and heavy cream. Add the grated Gruyere cheese and mix well.
  7. Add the mushroom and spinach mixture to the egg mixture and stir to combine.
  8. Pour the mixture into the pie crust.
  9. Bake in the preheated oven for 35-40 minutes or until the filling is set and the crust is golden brown.
  10. Allow the quiche to cool for a few minutes before slicing and serving.
