Mushroom and Sausage Stuffing

Ingredients:

  • 1 lb. of bulk sausage
  • 1 large onion, chopped
  • 4 stalks of celery, chopped
  • 1 lb. of sliced mushrooms
  • 1/4 cup of chopped fresh parsley
  • 2 teaspoons of dried sage
  • 2 teaspoons of dried thyme
  • Salt and pepper to taste
  • 8 cups of cubed bread
  • 2 cups of chicken or vegetable broth
  • 1/2 cup of unsalted butter, melted

Instructions:

  1. Preheat the oven to 375°F.
  2. In a large skillet, cook the bulk sausage over medium heat until browned, breaking it up into small pieces with a spatula.
  3. Add the chopped onion and celery to the skillet and cook until they’re soft and translucent, stirring occasionally.
  4. Add the sliced mushrooms to the skillet and cook until they release their moisture and are browned, stirring occasionally.
  5. Add the chopped parsley, dried sage, dried thyme, salt, and pepper to the skillet and stir to combine.
  6. In a large mixing bowl, combine the cubed bread and the sausage and mushroom mixture.
  7. Pour the chicken or vegetable broth over the bread mixture and stir to combine.
  8. Add the melted butter to the bread mixture and stir to combine.
  9. Grease a 9×13 inch baking dish.
  10. Spoon the bread mixture into the baking dish, spreading it out evenly.
  11. Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
  12. Remove the foil and bake for an additional 10-15 minutes or until the top is golden brown and crispy.
  13. Let cool for a few minutes before serving.
